Hello friends! Whether it's Holi, Purnima, or just a special weekend—in North and East India, any festival menu is completely incomplete without Pakore wali Kadhi. However, many people always complain that their kadhi curdles (splits) or the pakoras (badi) turn out hard from the inside.

In today’s blog, I am sharing my complete Kadhi-Bari recipe along with those secret tricks so that your kadhi will never split, and the badis will turn out super soft, spongy, and juicy every single time!

📋 Main Ingredients (सामग्री)

  • Gram Flour (Besan): 1 cup (half cup for pakoras, half cup for kadhi batter)
  • Curd (Dahi): 1 cup (Ensure besan and dahi quantities are equal!)
  • Water: 4 cups (for making the batter)
  • Spices & Tempering: Salt, Turmeric (Haldi), Carom seeds (Ajwain), Asafoetida (Heeng), Dry red chilies, Curry leaves, and Mustard oil

👩‍🍳 Step-by-Step Recipe

📝 Step 1: Making the Pakora (Badi) Batter

First, take half a cup of besan in a bowl. Add salt as per taste, turmeric, and ajwain. Now, add water gradually and mix it well to make a thick batter.

💡 Secret Tip for Spongy Badi: To make the badis porous and soft from the inside, add 1/4th tsp of baking soda (or unflavored Eno). Mix well, cover it, and keep it aside for 15 minutes to ferment beautifully.

🍳 Step 2: Frying the Badi the Right Way

After 15 minutes, heat mustard oil in a kadhai on medium flame. Once the oil is hot, drop small portions of the batter using your hands. Because of proper fermentation, you will see small holes forming in the pakoras as soon as they hit the oil—this means the kadhi juice will absorb inside properly. Fry them until they turn a beautiful light golden color, then take them out.

🥣 Step 3: Preparing the Dahi-Besan Mixture (Kadhi Batter)

Now, in the remaining half cup of besan, add 1 cup of well-whisked dahi and a little turmeric. Slowly add water while whisking it continuously until it becomes a completely smooth, thin mixture with no lumps. Remember, do not add salt at this stage!

🌶️ Step 4: Tempering the Kadhai (The Anti-Curdling Secret)

Heat a little mustard oil in the kadhai, then add minced garlic and green chilies. Don't let the garlic burn; as soon as it roasts and releases its aroma, add finely chopped onions and sauté until they turn translucent.

🔥 Most Important Trick: Turn off the gas flame after roasting the onions! If you pour the dahi-besan mixture directly into a boiling hot pan on a running flame, the yogurt will instantly split (curdle). Add the mixture and an extra bowl of water using only the residual heat of the pan, stir everything thoroughly, and then turn the gas flame back on!

🍲 Step 5: Boiling and Adding the Badis

After turning on the gas, stir the kadhi continuously until it comes to its first boil. Once it starts boiling, cover it and let it cook thoroughly on medium flame for about 20-30 minutes. When the kadhi cooks and becomes thick, turn off the gas. In the very end, add salt and the fried badis. Adding badis after turning off the heat makes them absorb the juices perfectly and turn super juicy!

✨ Step 6: The Final Tadka (The Soul of Kadhi)

Heat mustard oil in a small tadka pan. Add dry red chilies, curry leaves, ajwain, and heeng. Pour the hot kadhi into a serving bowl and give it this sizzling tempering. Close the lid immediately so that all the rich aromas get trapped inside.
