- Condensed Milk: 200 ml (Half a tin)
- Cardamom Powder (Elaichi): 1 tsp (For authentic flavor)
- Dry Fruits: 2 tbsp (Finely chopped pistachios and almonds for garnishing)
👩🍳 Step-by-Step Cooking Instructions
Step 1: Prepare the Paneer
Take 400 grams of fresh paneer. Grate it finely using a grater or crumble it smoothly with your hands. Ensure there are no big lumps left.
Step 2: Mixing the Ingredients
Heat a non-stick pan or heavy-bottomed Kadhai on low-medium flame. Add the grated paneer and 200 ml of condensed milk into the pan. Mix them thoroughly until well combined.
Step 3: Cooking the Mixture
Cook the mixture on low-medium heat, stirring continuously so it doesn't stick to the bottom. After 4-5 minutes, you will notice the mixture starts thickening and leaving the sides of the pan. Add 1 teaspoon of cardamom powder at this stage and mix well.
Step 4: Setting the Kalakand
Grease a plate, tray, or baking dish with a little bit of ghee. Transfer the hot Kalakand mixture into the greased tray. Smooth out the top layer evenly using a spatula to about 1/2-inch thickness.
Step 5: Garnish and Cool
Immediately sprinkle the finely chopped pistachios and almonds over the top. Gently press them down with the spatula so they stick to the sweet. Let it cool down completely at room temperature for 1-2 hours, or keep it in the refrigerator for 30 minutes to set.
Step 6: Serve!
Once perfectly set, cut the Kalakand into square pieces using a sharp knife. Your super soft, juicy, and grain-textured Instant Kalakand is ready to serve!

- Paneer Quality: Always use fresh and soft paneer for the best grainy texture. If using store-bought frozen paneer, soak it in warm water for 15 minutes before grating.
